The main treat of the holiday is pancakes, which turn out especially delicious on Maslenitsa! Pancakes are prepared from different types of flour, with the addition of various ingredients.
Each housewife has her own pancake recipe.
Today I invite you to cook with me the thinnest and very tender pancakes made with mineral water. They turn out very tasty, elastic and thin, like a sheet of paper.

LIST OF INGREDIENTS

  • 1 liter of mineral water
  • 400 gr. sour cream
  • 400 gr. flour
  • 3 eggs
  • 2-3 tbsp. Sahara
  • 1/2 tsp. salt
  • 3 tbsp. vegetable oil

  • 30 ml. vegetable oil

PANCAKES WITH MINERAL WATER— STEP-BY-STEP RECIPE

In the bowl in which we will knead the dough, beat the eggs, pour in sugar, salt, and mix everything well with a whisk.

Then add sour cream, you can use sour cream of any fat content, I used 20%.

Once again, thoroughly mix all the products.

Then pour in the pre-sifted flour and knead the dough.

Small the secret of thin pancakes:

To ensure a smooth dough without a single lump, do not add all the liquid to the dough at once.

Pour the remaining mineral water into the resulting dough and bring the pancake dough to a homogeneous consistency.

In this recipe, you can use both mineral and plain drinking water, but definitely highly carbonated - this is the only way the pancakes will turn out tender, delicate and very soft.

All that remains is to pour vegetable oil into the dough, mix it again and leave it on the table to “rest” for 15-20 minutes so that the gluten of the flour swells.

After 20 minutes, place the pans on the stove, heat them well, then slightly reduce the heat and start baking pancakes, each time greasing the pan well with oil.

To do this, you can use a silicone brush, a piece of lard or a potato cut in half.

Grease a well-heated frying pan, pour a small portion of dough onto it and spread it in a thin layer over the entire surface of the frying pan.

The less batter you pour into the pan, the thinner your pancakes will be.

This thin pancake dough bakes very quickly - it took me 40-50 seconds. from each side.

Thus, we prepare all the pancakes.

This amount of dough yields 35-40 thin golden pancakes, 20 cm in diameter.

You may end up with a little more or less, depending on the size of the pan and the thickness of the pancakes.

As for proportions, many housewives have already determined the golden mean for themselves. For 500-600 ml of liquid (water, milk, whey, kefir), take 3-4 chicken eggs. About 300 g of flour is added. You can mix the mixture with a whisk or mixer. To avoid lumps, flour is added in small portions through a sieve and mixed at the same time.

To ensure that the pancakes have holes, it is recommended to use baking soda. In our case, it is extinguished with vinegar.

The specified quantity of products yields 25 pancakes with a diameter of 19 cm. It is most convenient to fry them in two frying pans so that the cooking process does not drag on for a long time.

How to cook pancakes with mineral water

Beat three eggs into a bowl. Add granulated sugar, vanilla sugar and a pinch of salt there. Using a whisk, whisk everything into a homogeneous mixture.

In a separate container, extinguish the baking soda with vinegar. And immediately pour into the egg mixture.

Pour in sparkling water and stir. At this stage, the soda will begin to actively fizz.

Gradually add flour through a sieve. Mix thoroughly with a whisk.

Pour 3 tbsp. vegetable oil.

This is the consistency your pancake batter should be. It should not be too thick, but not liquid either. The amount of flour may differ slightly from that indicated in the recipe.

Heat the pancake pan well. Lubricate it with vegetable oil using a pastry brush or paper towel. Pour the batter and spread throughout the pan. Fry the pancakes over high to medium heat on one side first.

Then, when the bottom is browned, turn it over to the other side for literally half a minute. And shoot right away. Thanks to mineral water and soda, pancakes come out with neat and beautiful holes.

Stack the finished hot pancakes on top of each other. In this case, you can grease each one with butter.

How to make vegan pancakes without milk or eggs:

1. Pour water into a bowl and stir sugar and salt into the water.

Yesterday I baked this recipe, tried it on cast iron and non-stick frying pans over medium heat. At first the dough was sticky on both sides. Added 2 tbsp. with a heap of central flour (it mixes better into the finished dough than white flour), and off you go pancakes! True, due to the additive the flour is not thin, but thicker. More holey and fluffy ones came out with cast iron; I observed the same effect with regular dough. After 10-15 minutes the dough arrived and the pancakes became much fluffier. My conclusion is that you need to let the dough rise for at least 15 minutes before baking; maybe, by the way, you wouldn’t have to add flour.
